Oszczypek is a very old, smoked cheese, made by shepherds living in the Tatra mountains of Poland from unpasteurised sheep's milk. It has a distinctive, slightly salty taste, and its colour varies from pale yellow to brown, depending on the duration of smoking.
Wow. Not far off, at least the Polish bit, Jonny being half Polish. :-) I am quite a cheese lover (I am Bleasdale - a marbled cheddar- myself by the way), but by no means a connaisseur. I have never heard of this cheese and I don't think our local deli stocks it. One of the few Polish shops around here might have it though. Have to ask my mother in law how to pronounce it...

Jarlsberg is a traditional hard cheese from Norway. It is similar to Emmental, conplete with holes, but is has a sweeter, more nut-like flavour.
Must admit this does not scare me off the least. Rather like it '-)
