For the first time in years I remembered on time that pancake day was coming up, so we decided to give in to our childhood pleasure and have a pancake dinner yesterday. Yummie! Another 39 days to Easter. Officially pancake day is the last opportunity to use eggs and fats before embarking on the Lenten fast and pancakes are the perfect way of using up these ingredients.
